4. Eggplant Rollatini

It’s similar to eggplant parmesan, but the slices are thinner, stuffed with ricotta cheese, and then rolled up and topped with delicious red sauce. You’ll pre-fry the eggplant for a few minutes on the stove before smothering them in cheese and sauce and finishing them in the oven.

5. Portabella Mushroom Burgers

Burgers aren’t usually the first thing that shows up when you search for healthy dinner ideas. But when you swap out that greasy beef patty for a delicious portabella mushroom, that changes everything.
