This strawberry caprese salad is a fruity twist on the classic Italian dish, with juicy, ripe strawberries standing in for tomatoes. The sweet-tart flavor of strawberries goes beautifully with fresh mozzarella, basil and a drizzle of balsamic vinegar. This colorful salad is perfect as an appetizer, side dish or light lunch. To make it a main dish, top it with roasted chicken or add white beans.
Strawberry Caprese Salad
Serves 4

2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon ground pepper
2 cups strawberries, hulled and quartered
2/3 cup fresh small mozzarella cheese pearls
1/4 cup loosely packed basil leaves
1. Whisk 2 tablespoons oil, 1 tablespoon vinegar, 1/4 teaspoon salt and 1/8 teaspoon pepper together in a small bowl until fully combined.
2. Arrange 2 cups quartered strawberries and 2/3 cup mozzarella pearls on a large platter; top with 1/4 cup basil. Drizzle evenly with the oil mixture and serve immediately.
