Main Course: Cobb Salad

1 head Romaine lettuce
6 cups spring greens
2 hard-boiled eggs, chopped
2 large tomatoes, chopped
1 green pepper, sliced
2 avocados, peeled, pitted and diced
2 cups cooked chicken or turkey breast, diced
2 cups cheddar cheese, grated
1/3 cup bacon bits

Combine all ingredients in a large bowl and toss. Drizzle with dressing just before serving. We suggest the Blue Cheese Dressing that follows.

The Skinny: Use skinless chicken or turkey breast, fat free or low fat cheese and low fat bacon bits.

Blue Cheese Dressing

 

4 oz. blue cheese
1/2 cup buttermilk
1 cup sour cream
1 tsp. sugar
1 garlic clove, minced
Salt and pepper to taste

Combine all ingredients and mix well. Chill until ready to serve.

The Skinny: Use skim milk and low-fat sour cream. We have never seen low fat blue cheese but if you can find it then give it a try.
