There are days when your schedule just seems to fall apart. I understand. It happens to me, too.

You weren’t planning on having to drive your teenager to volleyball after school. Or you weren’t planning on your boss coming to you with an emergency project when you were just about out the door. You’ve lost a half hour or more, and now you have to pull dinner together. Quick.

Or maybe you’re not much of a cook. You are not entertained by cooking. It doesn’t relax you. It makes you a bit nuts. You just want to get a simple dinner together, and fast.

Meal solution items are the things that are already partially or fully prepared. You can find them in the deli, the meat department, the salad bar and the produce section. These entrée items are simple and tasty. They all work with the ZReduction stage of Plan Z and can be eaten in the ZReboot phase, too.

Pumpkin Chiffon

Just in time for a fancy party, a super-easy, festive dessert. This can be made in about 3 minutes and keeps for days covered in the refrigerator. Feed this to the kids and adults alike on a weeknight too; instead of ice cream.

Ingredients:

1 package of cream cheese (softened). Just leave it out on the counter to soften up, or you can zap it in your microwave (unwrapped and in a bowl) for 10-15 seconds on high.
½ cup of canned pumpkin
¼ cup of Truvia (granulated)
½ tsp of pumpkin pie spice
1 tsp of vanilla

Instructions:

Put all ingredients in a medium bowl and whip with your electric mixer for 2 minutes until fluffy and smooth. Half way through whipping be sure to scrape down the sides of the bowl.

Cover the surface with plastic wrap and put it in the refrigerator. You can use an ice cream scoop to serve it. To make it fancy, just serve it in a pretty bowl.
