I would love to be relaxing on a tropical island with my feet in the sand, enjoying the crashing waves and a cool ocean breeze. Unfortunately, that vacation isn’t in the cards for me this summer, which is why I’m making this new whipped lemonade on repeat. Adding pineapple and coconut gives it a tropical vibe plus makes it even more delicious and refreshing. It’s a frosty summer drink that is equal parts lemonade and milkshake that I’m positive everyone in the family will love.

Tropical Whipped Lemonade
Serves 1
1/2 cup cream of coconut
1/4 cup freshly squeezed lemon juice (2 medium lemons)
2 cups frozen pineapple chunks (9 ounces)
1/2 cup ice cubes (2 1/2 ounces)
Whipped cream, for topping (optional)
Lemon slice, for garnish (optional)
1. Place 1/2 cup cream of coconut, 1/4 cup lemon juice, 2 cups frozen pineapple chunks, and 1/2 cup ice cubes in a blender, preferably high-speed. Using the tamper if needed, blend until smooth, about 1 minute.
2. Pour into a glass and garnish with whipped cream and a lemon slice, if desired.
Recipe note: Substitute the cream of coconut with 1/3 cup whisked unsweetened coconut cream plus 1/4 cup sweetened condensed milk.
