Pumpkin Cheesecake

Makes 1 (8- to 9-inch) cheesecake

Serves 12

For the crust:

12 whole graham crackers, or 1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

 

1/2 teaspoon kosher salt

6 tablespoons unsalted butter, melted

For the filling:

3 (8-ounce) packages cream cheese, at room temperature
