Environmental Nutrition: Gad-zukes!

1. Preheat oven to 400 F.

2. Using a vegetable peeler, slice zucchini lengthwise into long, thin strips and place in a medium-sized bowl.

3. Add all remaining ingredients, except basil, and toss lightly.

4. Arrange on a baking sheet, and bake for 20 minutes. Top with fresh basil.
