EatingWell: Winter warm-up

1 large sweet onion, chopped

1/4 teaspoon salt

2 teaspoons smoked paprika

1/4 cup dry white wine

1 head cauliflower (about 2 pounds), cored and chopped

4 cups low-sodium chicken broth or no-chicken broth, divided

 

2 teaspoons cornstarch

3/4 cup shredded smoked Gouda

1/4 cup heavy cream

Preheat oven to 350 F.
