Asparagus may be a green vegetable, but it can carry a surprisingly high carbon footprint, especially when it's bought out of season. In fact, it's often cited as one of the more climate-intensive vegetables -- sometimes rivaling lower-impact animal proteins, depending on how it's transported. The issue isn't the plant itself, but how it's supplied year-round. Asparagus has a short growing season and spoils quickly, which means it's frequently air-freighted long distances from countries like Peru. When possible, choose in-season, locally grown asparagus to significantly reduce its carbon footprint.
