Melon Mandarin Salad

A tasty fruit salad that is a breeze to make and a unique way to round out a meal.

Servings: Serves 2

Ingredients:

2 cups of sliced melon (I was in a rush so I bought pre-cut melon cubes and sliced them into thinner pieces. It cost me a little more but it saved me from having to slice the melon, scoop out the seeds, and cut off the peel.)
¾ cup of mandarin orange segments (Buy a small can. Drain them. If they are packed in sugar water, you can rinse them and let them drain.)
a handful of chopped walnuts; the ones in the baking section of the store work great
2 Tbl of olive oil
grated sea salt and pepper to taste

Instructions:

Put 1 cup of melon slices in each bowl.

Add half of the mandarin orange segments on top of the melon.

 

Scatter on the walnuts divided amongst the two salads.

Drizzle on your olive oil.

Dust with sea salt and pepper.

Ready to eat!

I served this along with a simply grilled steak, and it makes for a wonderful, healthy meal on a hot day. The steak can even be served cold.
