The Kitchn: There’s nothing quite like homemade beef broth

2 tablespoons tomato paste

1/2 medium bunch fresh parsley

8 sprigs fresh thyme

3 dried bay leaves

1 tablespoon whole black peppercorns

1/4 cup red wine vinegar

 

Kosher salt

1 to 3 teaspoons soy sauce (optional)

1 cup ice cubes

1. Arrange a rack in the middle of the oven and heat the oven to 450 F.
