Kary Osmond: Simple, but impressive pasta dish puts the spotlight on mushrooms
I am addicted to mushrooms, I love them raw, sauteed, simmered, braised, grilled, fried and roasted, and I especially love them with pasta.
This is a simple, but impressive pasta dish, and because there are few ingredients, I make sure I’m using the best ingredients I can afford. That starts with the dried pasta. Splurge a little here and find a pasta made in Italy; it will make all the difference.
Mushroom Tagliatelle
Serves 2 to 3
250 grams dried tagliatelle
Salt
2 tablespoons olive oil
227 grams mushrooms, cut into bite-sized pieces
1/2 cup finely chopped onion
