The Kitchn: Cheesy baked beef rigatoni is as comforting as it gets

Serves 8 to 10

1 medium yellow onion

4 cloves garlic

12 ounces low-moisture mozzarella cheese, divided

3/4 ounce Parmesan cheese, grated (about 2/3 cup grated on a Microplane or 1/4 cup store-bought)

2 tablespoons olive oil

 

1 pound lean ground beef

1 teaspoon kosher salt, plus more for cooking the pasta

1 teaspoon dried Italian seasoning

1/2 teaspoon freshly ground black pepper
