Kary Osmond: Rice and lentils make a satisfying and adaptable meal

A well-made rice and bean recipe is simple tasting yet fully and completely satisfying -- which is probably why this recipe is one of my favorite dishes to make. Serve it with a fuss-free salad made of iceberg lettuce, super ripe tomatoes and a basic vinaigrette, and you've got yourself a complete meal.

In theory, it's a very simple recipe, as long as you know how to cook rice, lentils and caramelized onions. In case you don't, I've laid out the steps below with my usual tasty tips. Big picture: It's best to get everything measured out first before you start cooking. This will allow you to cook everything at once to save time.

Rice and Lentils

Serves 4 to 6

2 cups water

 

1 cup brown lentils

1/2 teaspoon salt

2 tablespoons olive oil

1 cup basmati rice
