Chicken Enchiladas

Serves 4 to 8

Cooking spray

1 (15-ounce) can enchilada sauce

1 (4-ounce) can diced green chiles (do not drain)

 

4 cups shredded, cooked chicken (from a 3- to 4 -pound roasted chicken)

1 (15-ounce) can black beans, drained

3 1/2 cups shredded Mexican cheese blend, divided

1/4 cup fresh cilantro leaves, chopped and divided
