Seriously Simple: Grilled lamb chops bring a spring awakening

1/4 cup Dijon grainy mustard

2 teaspoons soy sauce

2 garlic cloves, minced

1 shallot, minced

2 tablespoons chopped fresh mint

1 teaspoon lemon zest

 

2 tablespoons olive oil

Salt and freshly ground pepper

For the lamb:

8 to 12 (3/4-inch thick) rib lamb chops
