The Kitchn: 10 ways to enjoy corned beef this St. Patrick's Day

By Kelli Foster on

5. Layered on nachos

Not only will corned beef give your tray of nachos a festive Irish twist, but the extra boost of protein also totally makes them a dinner-worthy delight.

6. In a casserole

When in doubt, give corned beef the casserole treatment. Mixed with ingredients like veggies, rice or pasta, and cheese, a corned beef casserole will surely be an ultra-savory and indulgent affair.

7. Mixed into mac and cheese

Give that super-creamy bowl of mac and cheese the boost is deserves on St. Patrick's Day (and beyond). Cut into thin strips of hearty chunks, corned beef brings a salty, spiced and super-meaty twist to this already indulgent meal.

8. Stuffed into quesadillas

We know that cabbage makes a very welcome addition to cheesy quesadillas, so naturally we're super eager to bring on the corned beef too.

9. Cooked into savory hand pies

Choose between pie dough, pizza dough, or even puff pastry to turn corned beef into savory hand pies. Pair the meat with chopped vegetables, lentils, or cheese; seal inside a square of dough; and bake for a portable St. Patrick's Day bite.

10. Added to tacos

Use the slices of corned beef as the base for taco night. Keep it classic and festive with a cabbage (or kraut) and potato topping, or opt for any of your favorite fixings. Just don't forget the guac!
