--This dish may be prepared through Step 1 up to eight hours ahead. Have all ingredients chopped.

Indonesian-Style Fried Rice (Nasi Goreng with Shrimp)
Serves 4 to 6
For the fried rice:
3 cups water
1 1/2 cups long grain rice
1/4 cup peanut oil
3 carrots, peeled and diced
1/2 pound mushrooms, cleaned and diced
