Environmental Nutrition: Mushrooms boost shortfall nutrients

Eating a single serving of mushrooms each day increases intake of micronutrients, including those that are widely under-consumed, such as vitamin D, according to research. The study involved the addition of common mushrooms — white, cremini and portabella — to dietary data from the National Health and Nutrition Examination Survey. A half-cup (84 grams) serving increased several nutrients, including vitamin D, potassium and fiber, while having no impact on calories, carbohydrates, fat or sodium. Consumption of mushrooms exposed to UV light significantly increased vitamin D.
