The Kitchn: The big, beautiful grilled chicken salad I’m eating on repeat all summer long

1/3 cup apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon kosher salt

Freshly ground black pepper

1/2 cup extra-virgin olive oil

 

For the salad:

2 boneless, skinless chicken breasts (1 to 1 1/2 pounds total)

1/2 small red onion

1 large or 2 small romaine lettuce hearts
