The Kitchn: How to make easy peach cobbler with fresh summer peaches

Serves 6

For the filling:

1 tablespoon unsalted butter

8 medium peaches (about 3 pounds), pitted and sliced about 1/2-inch thick

1/4 cup granulated sugar

2 tablespoons freshly squeezed lemon juice (from 1 lemon)

 

2 teaspoons cornstarch

1 teaspoon vanilla extract

For the topping:

1 1/2 cups all-purpose flour
