The Kitchn: How to make the best smoked ribs

1 quart wood smoking chips

1 tablespoon packed dark brown sugar

1 tablespoon kosher salt

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

 

1 teaspoon freshly ground black pepper

1/2 teaspoon cayenne pepper

2 racks baby back ribs (about 4 pounds total)

1/4 cup Dijon mustard
