Farro Vegetable Salad
Serves 4
For the salad:
1 cup whole wheat farro (I used Bob's Red Mill organic Farro)
3 1/2 cups water
1/2 teaspoons salt
2 tablespoons finely chopped red onion
1/2 cup finely diced European cucumber
3/4 cup finely diced radishes
