Environmental Nutrition: Papaya power!

Papaya Ambrosia with Ginger Dressing

Serves 6

2/3 cup yogurt, plain

1/4 cup walnuts or almonds, finely chopped

1 teaspoon honey

1 teaspoon fresh ginger, minced

1 papaya, peeled, seeded and cut in chunks

1 cup seedless grapes, halved

 

1 pear, cored and cut in chunks

1. In a small bowl, stir together the yogurt, chopped nuts, honey and minced ginger.

2. Combine papaya, grapes and pear chunks; spoon dressing over. Toss lightly to combine.

3. Chill a few hours before serving.

Nutrition information per serving: 104 calories, 3 grams (g) fat, 15 g carbohydrate, 3 g protein, 2 g dietary fiber, 17 milligrams sodium.
