Environmental Nutrition: Let star fruit shine

1 cup cucumber, peeled and diced

1/2 cup red pepper, diced

1 jalapeno, seeded and finely chopped

1/3 cup red onion, diced

1 tbsp like juice

1 tbsp orange juice

 

1/2 cupe cilantro leaves, roughly chopped

Salt and pepper to taste

Combine ingredients in a large bowl, and season with salt and pepper to taste.

Nutrition information per serving: 60 calories, 0 g fat, 13 g carbohydrate, 1 g protein, 2 g dietary fiber, 0 mg sodium.
