Dessert: Coconut Custard Pie

1 cup sugar
2 Tbsp. all-purpose flour
1/2 tsp. salt
3 eggs, beaten
1 cup milk
4 Tbsp. butter, melted
1 cup coconut, shredded
1 tsp. vanilla extract
1 9-inch deep dish pie crust

Preheat oven to 350 degrees. Combine sugar, flour and salt in a bowl. Add eggs, milk, butter, coconut and vanilla and stir until well blended. Pour into piecrust and bake for 45 minutes to 1 hour at 350 degrees until set.

 

The Skinny: Use your favorite sugar and egg substitute and low fat milk. Coconut has lots of fat and calories but, let's face it, you can't have coconut pie without coconut.
