SERIOUSLY SIMPLE: Soft shell crabs are a limited seasonal summer dish

Coating:

1/3 cup all-purpose flour

Pinch freshly ground black pepper

Pinch salt

1/8 teaspoon ground red pepper (cayenne)

1/8 teaspoon paprika

 

Crabs:

4 jumbo (4 ounces each) soft-shell crabs, cleaned and dried

1/4 cup vegetable oil

4 tablespoons unsalted butter
