It looks like winter is here to stay for another six weeks, if you believe the famous groundhog's shadow. For many of us, that means comfort food in our trusty slow cooker. Here's a recipe for Forgotten Minestrone, from Taste of Home's "Skinny" cookbook, that is full of flavor, low in calories, full of vegetables and high in protein.

FORGOTTEN MINESTRONE

Servings: 8

1 pound beef stew meat, cut into 1/2-inch cubes

1 can (28 ounces) diced tomatoes, undrained

1 medium onion, chopped

 

2 tablespoons dried parsley, minced

1 teaspoon salt

1 1/2 teaspoons ground thyme

1 beef bouillon cube
