Appetizer: Black Bean and Corn Salsa
1 15-oz. can black beans, rinsed and drained
1 cup fresh plum tomatoes, chopped
1/2 cup sweet onion, chopped
1/4 cup fresh cilantro, chopped
Juice of one lime
1/4 cup olive oil
4 oz. Mexican beer
1 tsp. sugar
2 serrano chilies, seeded and chopped
Salt and pepper to taste
Combine all ingredients in a large bowl and serve with tortilla chips.
The Skinny: We would say to use light beer but there is not that much to begin with and we don't like light beer anyway.
