Appetizer: Tomato, Egg and Mayonnaise Salad
4 fresh tomatoes, sliced
1 sweet onion, sliced
One quarter cup radishes, sliced
4 hard-boiled eggs
One third cup mayonnaise
2 Tbsp. capers
Salt and pepper to taste
Place fresh sliced tomatoes on a platter and top with sliced onion and radishes. Combine hard-boiled eggs and mayonnaise and mix well. Place mayonnaise mixture over tomatoes, onion and radishes. Sprinkle with capers and salt and pepper. Serve with a fresh loaf of crusty bread.
The Skinny: Use light mayo.
