Recipe -- Chicken Supremes with Grapefruit Sauce

Serves 4
Ingredients
* 2 tablespoons olive oil
* 4 chicken breast quarters
* 2 grapefruit
* 4 tablespoons light cream
* pinch of ground turmeric
* pinch of saffron threads
* salt and pepper
Directions
Heat the oil in a skillet. Add the chicken breasts and cook over a medium heat for 6 minutes, then turn them over, season with salt, and cook the other sides for 6-10 minutes more. Remove from the pan and set aside. Check that it is done by piercing the thickest part of the thigh with the tip of a sharp knife, if the juices run clear and the meat is no longer pink, the chicken is cooked.
Squeeze the juice from one of the grapefruit. Peel the other grapefruit and cut out the segments from between the membranes, discarding the bitter white pith.
Drain off nearly all the oil from the skillet and reheat. Stir in the grapefruit juice and cream and cook until reduced and thickened, but do not let it boil. Season with salt and pepper and stir in the turmeric and saffron.
Return the chicken to the pan and heat through for a few minutes.
Add the grapefruit segments and serve immediately.

Betcha they meant Chicken Leg quarters. I've never seen where you can purchase chicken breast quarters separately anywhere. I'm sure the recipe could be done with chicken breasts too but it's always best to check for doneness (new word) with a probe meat thermometer. The above mentioned method is not proper way to check. To accurately check that the meat is fully cooked is to use a probe thermometer. Pink chicken meat is common even when fully cooked. Chef James should know this! Bone-in Chicken that has been frozen may retain pinkness around the bone after proper cooking. If you have no thermometer and the chicken has pinkness then cut or pull the meat away from the bone and compare the texture in relation to the white meat. If it is exactly the same, then it is just the colour of the meat. If the texture is any different, it is not cooked. Return to pan immediately and fully cook the chicken. Put and instant read thermometer on your shopping list. The digital ones are the best and only cost about $10.00.

There's an inexplicable error here -- in the list of ingredients, 4 chicken breast quarters are called for; in the cooking instructions, thighs are discussed.
