Italian Almond Cake

The grocery stores around here are overflowing with paczki. Paczki are Polish donuts. (We have the largest population of Polish people outside of Warsaw here in Chicago). Paczki are HUGE. Each one packs a full punch at 425-500 calories. I have no idea how many carbs are in one. You can smell the carbs just walking past the display.

Paczki are a Fat Tuesday tradition in the Polish culture. The history is they figure they need to use up the lard and the sugar before Lent starts, so this is their last big donut hurrah before they make their Lenten commitments.

How do you pronounce paczki? I just found out myself.

Italian Almond Cake

This dense and delicious cake is a cinch to make. Thanks to Plan Z Dieter Nancy for submitting this recipe! Servings: Serves 8

Ingredients:

 

5 Eggs, separated
½ tsp. Salt
1 tsp. Organic Vanilla
1 tsp. Almond Flavoring
Zest and Juice of a Lemon
10 tsp Truvia
2 C. Almond Flour

Instructions:

Preheat your oven to 350 degrees.

Grease springform pan (or a 10-inch round cake pan). It is easier if you then line the pan with parchment paper.

Beat egg yolks until light in color then add the rest of the ingredients except the egg whites.

In a separate bowl, beat the egg whites until they form a soft peak. Add a third of the beaten egg whites to the other mixture and mix well. Add the rest of the egg whites and put in the greased pan.

Bake for 30 minutes or until toothpick comes out clean. Cool completely before removing from the pan.
