Cookie classics: Make-ahead holiday cookies combine two favorites in one

1 1/2 cups (375 mL) all-purpose flour

1 teaspoon baking soda

1 teaspoon kosher salt

8 ounces (250 g) unsalted butter, at room temperature, cut into small pieces

1 cup (250 mL) firmly packed dark brown sugar

1 cup (250 mL) granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1 pound (500 g) bittersweet chocolate, coarsely chopped to the size of large chocolate chips

2 cups (500 mL) quick-cooking rolled oats
