Seriously Simple: Cornmeal-crusted soft-shell crabs are a seasonal delight

3 tablespoons yellow cornmeal

Pinch of cayenne pepper

Salt and freshly ground black pepper

To cook the crab:

1/4 cup unsalted butter

1/4 cup olive oil

 

2 shallots, finely chopped

1/4 cup fresh lemon juice

2 garlic cloves, minced

1 tablespoon capers, rinsed and drained
