EatingWell: Take a dip

No breading and frying here! Layer on the cheese and tomatoes, and use leftover chicken (or turkey) in this healthy dip recipe.

Chicken Parmesan Dip

Serves 8

1 tablespoon extra-virgin olive oil

 

1/2 cup finely chopped onion

3 cloves garlic, minced

1/2 teaspoon crushed red pepper

1 (14-ounce) can fire-roasted diced tomatoes
