EatingWell: When I dip, you dip, we dip

This healthy squash dip recipe, spiced with curry and made creamy with the addition of coconut milk, is a delicious alternative to hummus. You can also use other types of winter squash, pumpkin or sweet potatoes in place of the butternut squash in this dip.

Curried Butternut Squash Dip

Serves 14

Active Time: 45 minutes

Total Time: 4 hours (including 2 hours chilling time)

1 (2-pound) butternut squash

 

1 teaspoon extra-virgin olive oil

1 teaspoon curry powder

1 teaspoon ground cumin

1 1/4 cups "lite" coconut milk
