Everyday Cheapskate: How to Upsize a Cake Mix That's Too Small for the Recipe

1 1/2 cups all-purpose flour

1 cup sugar

2 teaspoons baking powder

1/4 teaspoon baking soda

To upsize chocolate mixes:

1 cup and 2 tablespoons all-purpose flour

1 cup sugar

6 tablespoons cocoa powder

 

2 teaspoons baking powder

1/4 teaspoon baking soda

Whisk all dry ingredients together and store in a clean mason jar. When you wish to increase a 15.25 ounce cake mix to 18.25 ounces, add 3 ounces of this mix to your existing cake mix. Store that remainder in a tightly closed container, like a glass canning jar with a lid, on the pantry shelf. Yield: About 6 portions.
