This Mother's Day, take Mom on a picnic

Choose a short pasta that has lots of nooks and crannies for the dressing to stick to. For extra protein, toss in a cup of rinsed and drained chickpeas.

For salad

1-pound box penne, rotini or fusilli pasta

1/2 head broccoli, cut into bite-sized florets

1 red pepper, cut into bite-sized slices

6 ounces baby spinach, torn into bite-sized pieces

 

1 pint multicolored cherry tomatoes, halved

8 ounces baby mozzarella balls

1/2 cup Kalamata olives, optional

Salt and pepper to taste
