Appetizer -- Cheese Walnut Wafers

4 oz cream cheese, softened
8 oz. blue cheese, crumbled
One quarter cup butter, softened
1 and one half cups flour
Pinch of salt
1 tsp. ground red pepper
Two thirds cup walnuts, crushed
2 egg yolks, beaten

Combine cheeses and butter and mix until blended. Slowly add flour and remaining ingredients until well blended. Shape into 2 log shapes and chill for at least 8 hours. Cut dough into one quarter-inch slices and bake for 12 minutes at 350 degrees on an ungreased baking sheet.

The Skinny: Use low fat cream cheese and your favorite egg substitute.
