Main Course: Beef Salad
1/3 cup rice wine vinegar
1/3 cup soy sauce
2 Tbsp. peanut oil
2 Tbsp. hoisin sauce
1 1/2 pounds lean sirloin beef
10 cups mixed greens
1 and 1/3 cup canned mandarin oranges, drained
1/2 cup chow mein noodles Combine garlic, vinegar, soy sauce, peanut oil and hoisin sauce and place in a large seal able plastic bag with the steak. Refrigerate overnight. Remove steak and reserve marinade. Grill or broil steak until it is cooked to your liking; slice into thin strips. Pour marinade into skillet and cook for several minutes. Place equal amounts of greens on 6 plates, followed by steak strips, oranges and noodles; use cooked and cooled marinade for dressing. The Skinny: Take it easy on the noodles. I love these things and they really do add a nice crunch to salads but they do have lots of calories.
