Appetizer: Apricot Cheese Log

1 pound sharp cheddar cheese, shredded
1 small onion, chopped
One half cup sour cream
One half cup mayonnaise
One half tsp. seasoned salt
Fresh ground pepper
Two thirds cup pecans
1 12-oz. jar apricot preserves

Combine first 7 ingredients together in a blender and blend. Mold cheese mixture in the shape of a log. Chill overnight. Just before serving, pour apricot preserves over cheese and serve with crackers.

The Skinny: Use light cheese, sour cream and mayo and low sugar preserves.
