Grilled Chicken with Strawberry Salsa

10 Minutes to No Bread

Every Saturday was grocery shopping day for my family. Mom would pile us small kids into the car and off we’d go. In the store we’d follow along next to the grocery cart while Mom shopped. I see kids in the stores these days negotiating with their mothers about what gets put in the cart. We didn’t do that. We didn’t dare. We were not in charge of making food decisions. Mom was.

The only thing I can really remember pleading to buy was Wonder Bread. I can remember the debut of the commercials. Wonder Bread not only looked cool in that white wrapper with the colorful circles but what was inside was cool too. Wonder bread was square. That was different. The bread we got from the bakery had that mounded shape on top and it had crustier crust. I hated that crust. I wanted the square bread without that top crust. Mom wasn’t buying it. We were eating bakery bread only.

When we went on vacation every summer we went to visit my grandmother. It was a four hour drive so it was a pretty big deal. Or ordeal. When you have five kids in the back seat of the car it seems to take forever to go four hours to get to Grandma’s. No one was happy in that back seat but that was just the way it was.

It was fun visiting our cousins. We had a blast with them, but otherwise the trip to grandma’s was pretty boring. Grandma was old. As grandmothers go my memories of my grandmother are few but mostly pleasant. She was a really nice old lady. She didn’t talk too much. She smelled a little like mothballs but that was okay. She wore dresses every day and sensible shoes. The weird thing grandma did was she ate brown bread and she drank tea.

We didn’t have tea in our house. Tea seemed foreign. And we didn’t have brown bread either. Ew. Brown bread. Brown bread might be okay for grandma but we had our bakery bread. We brought our own bread with us on the trip. We ate a lot of bread. Breakfast at my grandma’s was always toast and jelly. Lunch was always sandwiches.

We ate a lot of bread. No wonder people are pretty hooked on bread. It’s a tradition.

Now I know bread has addictive qualities. And now I know it’s not good for me. So I don’t eat much bread anymore. Rarely. And never a sandwich.

People have a hard time giving up bread though. Here are 10 minutes of reasons to give up bread. After you watch this YouTube video, it might not be so difficult to give it up.

 

To this day I have never bought a loaf of Wonder Bread and now I know I never will.

Grilled Chicken with Strawberry Salsa (SUPER EASY)

4 skinless chicken breast pieces
1.5 cups of sliced strawberries
1 cup of diced bell pepper (I chose red but you can choose your favorite or even a mixture)
½ cup of diced red onion
¼ cup of lime juice
Grate of sea salt

To make the chicken cook faster I pounded the chicken flat. To do this I put it in a zip lock bag (you don’t need to seal it) and then I use a meat mallet to pound it down to about 1/3” thick. It also makes you think you are getting more food because it takes longer to eat.

Spray your pounded chicken breasts and grill to your liking. You can grill outside or use a grill pan and do it in the house.

While the chicken is cooking you can make your salsa. Just put all of the ingredients in a bowl and stir. How simple!

Serve the salsa over hot chicken or cold. They both taste great. This is a really nice dish for a hot day.
