Spiral Ham with Apricot Mustard Glaze

Midnight “Masses”

As a young woman my boyfriend and I used to host what might be seen as a rather unique Christmas party.

What would happen is my boyfriend would get in touch with all of his former school buddies and invite them to come to our apartment at midnight on Christmas Eve. His theory was that everyone would be in town to visit with family but that at that late hour they would not be committed to any events with family and could come on over for a very late dinner.

He was right. They came in droves!

Those that were raised Catholic had just been to midnight mass so they came on the way home. Others had families who went to bed earlier in anticipation of Santa’s arrival. The older kids (young adults) were bored, and still awake, so they came on over too.

We were all young, so staying up late at night and then getting up for the Christmas festivities the next day was not a problem. We all had that young energy and could handle the revelry.

 

My ham became the entrée tradition. Even at that young age, I knew I had to find something to serve that could, a. feed the masses, b. sit out and taste good at any temperature, c. be easy to make because I had to do the entrée, sides and desserts and d. make good leftovers. So ham it was.

As I sit typing this I tire just at the thought of what I did to throw that party together! I’ll be up late on Christmas Eve and into the wee hours of Christmas morning because it’s tradition in my family to open gifts late in the evening, but I surely will not be hosting 20-40 for a dinner party! I’ll be sipping an after-dinner drink, laughing with my husband and cuddling with my kitties.
