Dessert: Tropical Parfaits
2 ripe papayas, peeled, seeded and diced
3 10-oz. cans mandarin oranges, drained
Juice of 1 lemon
1 tsp. fresh ginger, grated
2 Tbsp. grated orange or lemon peel
1/4 cup coconut, shredded
6 cups whipped topping
Combine all ingredients and gently mix. Spoon into parfait glasses or other clear glasses and chill until ready to serve.
The Skinny: Use fat free whipped topping (for those of you that might not know whipped topping is somewhat like prepared whipped cream. One name brand is Cool Whip). You could also leave out the coconut to cut out some fat and calories.
