Dessert: Fresh Apple Cake

Fresh Apple Cake

3 eggs
2 cups sugar
1 cup vegetable oil
2 and 1/2 cups all-purpose flour
2 tsp. baking soda
Pinch of salt
2 tsp. ground cinnamon
3 cups cored and sliced Granny Smith apples
2/3 cup chopped pecans
2/3 cup golden raisins
2 tsp. vanilla
1 tsp. lemon juice

Beat eggs, add sugar and oil and mix well. Sift together flour, soda, salt and cinnamon and add to mixture. Add remaining ingredients and stir. Pour batter into a greased and floured tube pan and bake for 1 and 1/2 hours at 325 degrees.

 

The Skinny: Use your favorite egg and sugar substitute and an equal measure of applesauce in place of the vegetable oil.
