Main Course: Sugar Glazed Ham
Sugar Glazed Ham
7 lb. shank or rump end ham fully cooked
3/4 cup brown sugar
1 can pineapple rings
Maraschino cherries
Whole cloves
Rub brown sugar on the outer skin of the ham. Place pineapple rings over brown sugar and place a cherry in the middle of each pineapple ring and stud with cloves. Bake for 2 hours and 15 minutes at 325 degrees. Cool for 15 minutes before slicing and serving.
Raisin Sauce for Ham
1 and 1/2 cups water
1/2 cup raisins
1/4 cup brown sugar
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1/2 tsp. dry mustard
2 Tbsp. butter melted
1 Tbsp. apple cider vinegar
1 Tbsp. flour
Boil water and add raisins. Return to boil for several minutes. Add remaining ingredients and cook over low heat for 10 minutes.
The Skinny: Use your favorite sugar substitute.
Fried Apples
1/4 pound butter 6 apples peeled, cored, and sliced into 1 inch pieces
1 Tbsp. brown sugar
1 tsp. lemon juice
1/2 tsp. cinnamon
1/2 tsp. ground nutmeg
Melt butter in a large pan. Add apples, sugar, lemon juice, cinnamon and nutmeg and saute until tender and brown. Serve warm
The Skinny: Use your favorite sugar substitute.
Deviled Eggs
6 eggs hard boiled
1/2 cup mayonnaise
1 Tbsp. mustard
3 Tbsp. dill or sweet relish, depending on your taste
1/4 tsp. curry powder
1/4 tsp. salt
Paprika
Place eggs in shell in rapidly boiling water, enough to just cover eggs, for 10 minutes. Drain water and allow the eggs to cool. Gently peel shell away and slice eggs lengthwise. Gently remove hard boiled yolk from each egg and place in a bowl. Add mayonnaise, mustard, relish, curry powder, and salt to the egg yolks and mix well. Spoon mixture back into egg white halves and sprinkle with paprika. Serve chilled.
The Skinny: Use light mayo.
