Appetizer -- White Gazpacho
3 large cucumbers, peeled, seeded and chopped
2 cups chicken broth
One quarter cup green onion, chopped
1 garlic clove, minced
1 cup plain yogurt
2 cups sour cream
1 Tbsp. vinegar
1 Tbsp. fresh dill
Salt and pepper to taste
Fresh tomatoes chopped for garnish
Croutons for garnish
Combine first 9 ingredients together in a food processor and process until smooth. Chill until ready to serve. Pour into serving bowls and garnish with tomatoes and croutons.
The Skinny: Use fat free chicken broth and yogurt and light sour cream.
