Dessert: Fresh Peaches and Yogurt
One half cup sugar
One third cup water
2 tsp. grated lemon zest
1 tsp. vanilla
6 - 8 cups fresh peaches, peeled, pitted and sliced
4 cups vanilla yogurt
One quarter cup honey
One half cup sliced almonds
Combine sugar, water and lemon zest in a saucepan, bring to a boil and cook for about a minute. Remove from heat and allow mixture to cool. Toss mixture with peaches and vanilla. Place equal amounts of peaches in 6 - 8 dessert bowls. Combine yogurt and honey together and top peaches with yogurt mixture. Sprinkle with almonds and serve.
