Appetizer: Goat Cheese Salad

One half cup olive oil
One third cup lemon juice
1 Tbsp. green onions, chopped
1 tsp. Dijon mustard
8 oz. crumbled goat cheese
6 cups mixed greens
One half cup black olives
One quarter cup sunflower seeds
One third cup Parmesan cheese, grated

Combine first four ingredients in a salad cruet and shake well. Combine goat cheese, mixed greens and olives and toss; just before serving, pour dressing over salad and top with sunflower seeds and Parmesan cheese.

The Skinny: Goat cheese is lower in fat and calories than other cheeses.
