Healthy Mexican Recipes and Menus

When you’re craving ethnic food—without all the fat—look no further than our neighbors to the south for healthy, mouthwatering inspiration. Many Mexican staples—beans, corn, tomatoes and peppers—are bursting with important vitamins and nutrients. Often thrown into the broad "Latin" category, Mexican cuisine has distinctive qualities, such as its many uses of corn; complex moles and salsas; and a variety of chiles that perfectly accentuate their intended dishes. The tantalizing flavors of these rich and piquant recipes will help you kick-start whatever fiesta you have planned—and to drink, don’t forget the cervesa!

Cooking Tips

Heating tortillas:

If you’ve ever tried to wrap something in a dry tortilla just to be foiled by cracks and splits, don’t despair—help is here! You can soften tortillas several ways:

Microwave: Wrap in barely damp paper towels and microwave on High for 30 to 45 seconds.

Oven: Wrap in foil and bake at 300ºF until steaming, about 5 minutes.

Steamer: Wrap a stack of 12 tortillas in a clean, heavy towel, place in a steamer over 1/2 inch of water, cover and bring to a boil over medium-high heat. When steam is released, time 1 minute, then remove from the heat and let stand for 15 to 20 minutes. Held in a very low oven, the tortillas will stay warm and moist for an hour or more.

Cooking with fresh chile peppers:

If you’re using fresh chiles, know that the seeds and surrounding membranes are the spiciest part of the pepper. To increase the heat, use some or all of the seeds, depending on your preference and tasting as you go, along with the flesh of the pepper
